Whether you are looking for something to whip up this afternoon to go alongside your grilled burgers or steaks, or if you would like to bookmark this recipe for the future, these sweet potato fries are going to be a HIT whenever you make them!
They are spicy and flavorful and are a perfect, PERFECT match to my cool chimichurri aioli dipping sauce.
Not a fan of spice? Feel free to half the amount of chipotle or cayenne pepper in the coating. They will still be delicious!
Chipotle Sweet Potato Fries with Chimichurri Aioli

For the fries
- 2 medium-large sweet potatoes
- 3 tbsp. olive oil
- 1 tbsp. garlic powder
- 1/2 tbsp. smoked paprika
- 2 tsp. sea salt
- 2 tsp. ground chipotle powder (or you can sub. cayenne pepper)
- 1 tsp. cumin
- 1 tsp. black pepper
For the aioli
- 2-3 stalks of fresh Italian parsley
- 2-3 stalks of fresh cilantro (not a fan, just use extra parsley!)
- 1 green onion
- 2 cloves of fresh garlic
- the juice of 1/2 lime
- 1/4 cup of olive oil
- 1 tsp. sea salt
- 1 tsp. black pepper
- 2 tbsp. avocado mayo (or use regular if you can't find avocado)
For the fries
- Preheat oven to 400 degrees.
- Using a sharp knife, carefully slice sweet potatoes into fries (about 1/4in. in width x 2-3in. in length), leaving the skin on.
- In a large bowl, combine all seasonings and olive oil and whisk until the mixture becomes a paste.
- Add the sweet potatoes into the seasonings bowl and stir to coat well.
- Transfer to a baking sheet (with a rim) onto a even layer and bake for 12 minutes.
- Turn fries with a spatula and cook on the other side for an additional 15 minutes.
For the aioli
- Use a food processor or high powered blender to combine all of the ingredients until smooth.
