No Bake Key Lime Pie (Low carb, Keto friendly, Sugar free)
Key lime pie is one of those desserts I hated as a child and cant get enough off as an adult! My absolutely favorite Key Lime pie can be found in Old Key West at Pepe’s. It’s piled high with creamy and tart filling, with a homemade crust and whipped cream. It’s just out-of-this-world good! The famous Kermit’s would come in second for me, especially the chocolate covered Key Lime pie on a stick! I know it sounds strange- chocolate and Key Lime? But I just love it!
While I don’t have plans to travel to the Keys anytime soon, today I had Key Lime pie on the brain after watching someone on Food Network make Key Lime pie bites. I just happened to have had a bottle of key lime juice in the fridge, and so I got to thinking about how I could whip up a quick Key Lime pie, without having to use the oven (I have ribs in there right now!), and that’s how this no bake Key Lime Pie came to be!
It’s oh-so-tart and tangy, and perfectly creamy from putting all of the ingredients in the blender. The tartness of the juice also hides the secret ingredient (see below). I bet the picky eaters in your life won’t be able to detect it! Of course it had to be paired with homemade whipped cream, just like at Pepe’s, and a have that traditional “graham cracker crust” like the real thing!

No Bake Key Lime Pie (Low carb, Keto friendly, Sugar free)
Ingredients
- CRUST:
- -1 cup blanched almond flour/meal
- -1/2 stick salted butter
- -1 tsp. ground cinnamon
- -1/4 tsp. ground ginger
- -1/2 cup granulated sugar free sweetener of your choice (I used Swerve)
- FILLING:
- -2 ripe haas avocados
- -1 cup heavy whipping cream (or you can use a non-dairy option)
- -1/2 cup store-bought bottled key lime juice
- -1/2 tsp xanthan gum
- -1/2 cup powered sugar free sweetener (I used Swerve)
- pinch of salt
- WHIPPED TOPPING:
- -1 cup heavy whipping cream
- -1/4 cup sugar free powdered sweetener (I used Swerve)
- -1tsp vanilla extract
- pinch of salt
- -lime zest for a garnish
Instructions
- CRUST: Melt the butter in a small saucepan. When the butter is melted, add the almond flour, sweetener, and salt. Turn off the heat and stir until combined. Let it cool a bit and then press into a greased 8in or 9in pie pan. Set aside.
- FILLING: Add all filling ingredients into a blender and blend on high until very smooth. When the crust is cool, pour the filling over the crust spreading it evenly. Cover the pie with plastic wrap and put into the fridge for at least an hour.
- WHIPPED TOPPING: Add all of the ingredients into a mixing bowl and beat on high with a whisk attachment until peaks have formed in the cream. Dollop onto pie slices and garnish with lime zest!
