Coconut oil fudge

I hope you had a fabulous (and filling!) Thanksgiving Holiday!
And no matter how hard I tried to fight it, I was listening to Christmas tunes way before a slice of turkey entered my mouth. And decoration boxes may or may not be pulled out of the closet already. 

Hey, what can I say… I’m feeling festive! 
With feelings of joy and cheer, I bring you this: FUDGE. 

Oh glorious fudge! 
Who doesn’t like fudge?
And this one? Gluten free, refined sugar free, and dare I say, guilt free? Well, as long as you don’t eat the entire pan. 

Quick and easy fudge 
You’ll need:
1/2 cup solid coconut oil (health benefits of coconut oil)
1/2 cup unsweetened cocoa powder (health benefits of cocoa powder)
1/2 cup raw unfiltered honey 
1/2 cup unsweetened natural nut butter (I used peanut, just make sure to stir well!)
1 tbsp. vanilla extract
1 tsp. sea salt
1/2-3/4 cup chopped nuts (I used pecans)
*optional add-ins: unsweetened coconut flakes, dried fruit, or other extracts like peppermint or almond!

Using a mixer, combine coconut oil, nut butter and honey together. Add in cocoa powder, vanilla extract and sea salt. Mix until smooth. Fold in chopped nuts, then spread into an 9 x 9 (or similar size) pan lined with wax paper. Refrigerate 1-2 hours or until solid. Cut into bite size pieces and enjoy!
